The amount of hot cocoa that I have been drinking this Christmas is a tad embarrassing. But you know what? I’m totally okay with that because my hot cocoa is actually HEALTHY for me! Yepp, that’s right. Healthy Hot Chocolate you guys; life doesn’t get much better than that. Personally, I think that adding peppermint to hot chocolate makes is 10X better….thanks to the Starbuck’s Peppermint Mocha of course (they hooked me years ago). It just gives the drink that little extra touch of Christmas. If you’re not a fan of peppermint, you can always use extra vanilla extract in it’s place.
Wintry December nights are perfect for hot cocoa in a Santa mug, filled to the brim with marshmallows. This year I was super excited to find a healthy marshmallow called SmashMallow, and they actually have a Mint Chocolate flavor! (I ate the entire bag in about 1 week). This tops off the hot cocoa nicely, but also you can NEVER go wrong with mini marshmallows.
I have so many Christmas mugs, and it seems that every year my collection just gets bigger and bigger (as do the size of my mugs). For some reason hot chocolate just tastes better if it’s in a festive mug. Target has some fabulous mugs, which is where I got this cute “Cocoa for Santa” mug, and they are super inexpensive! TJ Maxx and World Market have some cute mugs as well.
So what make this hot cocoa a “superfood” drink you may ask? Well, instead of using cocoa powder like normal hot chocolate recipes, I used Organic Raw Cacao Powder. Not only does it taste better than plain cocoa powder, but the health benefits are fantastic! It gives you natural energy, but provides you with added amounts of zinc, calcium, and other nutrients that are great for our health. You can put this in smoothies, ice cream….pretty much anything you want to be chocolatey (if you’re a chocoholic like me, that’s a LOT of stuff).
I know I will be making this recipe again on Christmas Eve because I love it so much and so does everyone else in my family. It is officially part of our Christmas traditions. Put on some fuzzy PJ’s, curl up beside someone you love, watch How the Grinch Stole Christmas (Jim Carrey version of course) and sip on your healthy and delicious Superfood Peppermint Hot Chocolate. There is nothing more perfect than that.
- 4 C. organic whole milk
- ⅓ C. water
- ¼ C. raw organic cacao powder
- 1 tsp. vanilla extract
- ½ tsp. salt
- 4 drops of peppermint extract
- Stevia (to taste)
- In a medium saucepan, mix your dry ingredients (except Stevia).
- Add water and bring mixture to a boil. Continue to boil for 1 minute.
- Add milk and turn the temperature down to medium heat.
- Once mixture is heated, remove from heat and add extracts. Sweeten with Stevia to your preference.
- Serve with marshmallows and peppermint bits for the ultimate Superfood Peppermint Hot Chocolate!
