Hello everyone! What a beautiful and refreshing day it has been today. The sun finally decided to show itself again and bring us some warm weather here in NC, and I hope it did the same for you. For me, Spring is that time of year where I suddenly get all this energy back that was gone in Winter (cold weather seems to suck the life out of me) and get excited about everything! Literally, everything. Upcoming dance competitions, hiking, travel, going on adventures with my love, enjoying warm evenings outside with my friends and family, eating, cooking, getting to lay under the sun with a book and simply relax….it all sounds so perfect! Not to mention that Easter is coming up this weekend; there is so much to look forward too which is such a wonderful feeling. This morning I went with one of my good friends to get pedicures so that our feet would be presentable on Easter. How excited I am for shoes that show my toes! Boot season is officially over and I’m ready to bring out the colorful sandals and wedges that have been hidden under my bed during the snowy season. Spring is a sign of renewal for me, coming with an array of possibilities and shedding the winter slump.

So confession time. Today was the first time that I have tried avocado toast and let me tell you…it was AMAZING! I am a huge fan of guacamole, but this was just fabulous and incredibly simple! Such a great breakfast or lunch idea that is quick and simple. I paired it with tortilla chips and hummus for a balanced and nutritional lunch. Here’s what you need for the perfect Avocado Toast:

Ingredients:

Directions:

  1. Slice the avocado in half and scoop out the inside into a small bowl.
  2. Season the avocado (to taste) with the garlic seasoning, salt and pepper, and red pepper flakes. It doesn’t take much!
  3. Cut the butter into small pieces an put them on the piece of bread. Toast the bread until browned.
  4. Top the toasted bread with the avocado spread and sprinkle with more red pepper flakes if desired.

So I’m always looking for new healthy snack and food brands to try. I have seen Laughing Giraffe products on Instagram, and the other day when I was at T.J. Maxx I finally found some! Their products are not only organic, but incredibly nutritious. I love anything coconut….and chocolate…so their Snackaroons are a perfect snack for me.

Yogurt is also a great treat to enjoy for breakfast or a snack when Springtime comes! It’s so yummy and refreshing, not to mention you can change it up in so many different ways to have a unique experience every time you enjoy it. I enjoyed this delicious Strawberry and Banana Yogurt Bowl recently and it was delicious! Use this exact recipe, or change it up however you like:

Ingredients:

Directions:

  1. In a small bowl, mix the yogurt, vanilla extract, and Stevia together.
  2. Slice the banana into small pieces and add to yogurt.
  3. Tear the cheesecake bar into small pieces and add to yogurt.
  4. Top with your desired amount of granola, and enjoy!

Now my last new obsession that I would like to share with you is unfortunately not the healthiest thing to eat…but it is perfectly fine to have as a treat in small doses (if you have slight self-control issues when it comes to extremely yummy treats…I advise that you look away). I have heard about the Cookie Dough Cafe’s edible cookie dough through shows such as Shark Tank and social media, but I recently came across it at the grocery store and simply couldn’t resist. BEST. DECISION. EVER. This stuff is amazing! Cookie dough is one of my weaknesses, so it’s probably not very smart to keep it in the house. But, everyone deserves a treat every so often,Β so allowing myself a couple spoonfuls once in a while seems very reasonable to me. If you haven’t tried it yet, I highly recommend it. The one that I tried was the Monster flavor, complete with chocolate chips and M&M’s, but there are several other flavors that are available on the Cookie Dough Cafe website. Treat yo’ self πŸ™‚
