Serves: 8

Ingredients:

  • 8 ripe peaches, peeled, pitted + sliced
  • 2 Tbsp Stevia®
  • 1 tsp lemon juice
  • ½ tsp cinnamon
Topping:
  • ¼ cup brown sugar
  • 3 Tbsp organic all-purpose flour
  • 1 tsp Stevia
  • ½ tsp cinnamon
  • 3 Tbsp cold Kerrygold butter
  • ½ cup organic rolled oats

Directions:

  1. For filling: Preheat oven to 375 degrees. In a large bowl combine peaches, Stevia®, lemon juice and cinnamon. Pour peach mixture to a 9-inch (or 4 – 9 oz individual baking dishes) baking dish and set aside.
  2. For topping: In medium bowl, mix brown sugar, flour, Stevia®, cinnamon and salt. Cut in butter. Then add oats. Mix with fingers until mixture resembles coarse crumbs. Sprinkle topping over peach mixture.
  3. Bake for 25-30 minutes or until topping is golden brown and juices are bubbling. Serve warm with optional ½ cup organic vanilla frozen yogurt.
