This is the ultimate form of Dessert-for-Breakfast and let me tell you, it is AMAZING! These pancakes fully embrace every aspect of peach cobbler that we love like the sweet peaches, the crumbly topping, cinnamon sugary goodness, and creaminess…..but HEALTHY style! One of my all-time fave recipes, you will love it <3




  • 3/4 cup oats
  • 1 egg
  • 1/2 cup unsweetened almond milk
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp chia seeds
  • 1 tsp stevia

-Put everything in food processor and pulse until mixed. Cook on oiled skillet (bakers joy) like regular pancakes.

Cinnamon Yogurt:

  • 1/2 cup plain Greek yogurt
  • 1 tsp cinnamon
  • 1 tsp stevia

-Mix together

Oat Crumble:

  • 1/4 cup oats
  • 1/2 tsp vanilla
  • 1/2 tsp coconut oil
  • 1/2 tsp pure maple syrup

-Mix everything until well coated and bake in oven at 350 degrees for 10 minutes or until browned. Layer pancakes with cinnamon yogurt, sliced peaches, and a sprinkle of oat crumble. Drizzle some pure maple syrup on the top layer with an extra dollop of cinnamon yogurt and enjoy!
