This delicious recipe is perfect for an easy and light lunch full of flavor! Hummus is great on so many things and this combination is superb!



  • 4 whole wheat English Muffins
  • Roasted Red Pepper Hummus (or any other type of hummus you like)
  • 4 handfuls of Baby Spinach
  • Olive Oil
  • Garlic
  • Mozzarella


  1. Toast the English muffins until browned
  2. Saute the baby spinach in the olive oil and garlic
  3. Turn oven on broil. Top English muffin with hummus, spinach, and mozzarella
  4. Brown until bubbly
  5. Enjoy!
