Were you one of those kids that could eat almost an entire tub of cookie dough by yourself? Goodness, I’m embarrassed to say I was. I remember watching America’s Next Top Model marathons with my besties, eating cookie dough out of the tub up until the morning hours (and usually finishing the whole thing off). Super unhealthy, but so much fun. Happy to say the salmonella hasn’t killed me yet. 

There have been countless “healthy” cookie dough recipes, but I could just never find the right one. They still usually contained a ton of sugar and they didn’t have that delicious taste or texture we love; this is why we can eat an entire pint of it right? I always find myself dying to eat more dough than actual cookies when I’m baking…there’s just something so addicting about it. 

I found this Healthy Eggless Cookie Dough recipe on Yummy, Healthy, Easy and decided to try it. My expectations weren’t super high because it uses a secret ingredient that (at the time) I though was a little odd. Garbanzo beans! These little beans are the secret ingredient to so many recipes now like my delicious Chocolate Hummus, but at the time I was like “this is going to be a disaster, but I’ll try it anyway” because hello….I was desperate for some healthy cookie dough guys. 

After I had prepared the dough, I took one bit and knew that I had hit the jackpot. Absolutely delicious! It’s crazy how this combination can make the texture like actual cookie dough, but it does. Perfectly sweet and addicting, I immediately found myself eating it by the spoonful. One of my favorite ways to eat it is with pretzels. It’s a treat that you will find yourself coming back to again and again. 

I definitely recommend using a good food processor for this recipe. A blender works well, but a food processor will really get your garbanzo beans to that nice and smooth consistency. 

Healthy Eggless Cookie Dough
 
Plan your girl's night in, put on some Netflix, and chow down on one of our favorite guilty pleasures with 0 guilt! This healthy cookie dough is just as addicting and tasty as the original and you'll find yourself reaching for another spoonful over and over again.
Ingredients:
  • 1 (15-oz) can organic garbanzo beans
  • ½ C. natural peanut butter
  • 2 T. agave or honey
  • 1 tsp. vanilla extract
  • ½ C. dark chocolate chips
  • Stevia (to taste)
Instructions:
  1. Place garbanzo beans, peanut butter, agave or honey, and vanilla in a food processor/blender and blend until smooth.
  2. Put your "dough" in a bowl and fold in chocolate chips. Dig in with some pretzels, graham crackers, or just your big spoon!
