Hey guys! Hope everyone is having a great week so far. To be honest, I’m still in weekend mode. For the first time in a LONG time I had a Saturday off! I definitely took advantage of this and got to go hiking with my wonderful boyfriend. There are so many places that I have been dying to go this Summer but I haven’t had much free time, so this was a great treat! It was so great to just relax, not be on a strict schedule, and just enjoy nature and the beauty of the NC mountains. Plus, it was really nice to spend the whole day with my guy. We started out our day with a delicious brunch (cooked by me) of Lemon Poppy Seed Loaf and Chipotle Garlic Eggs along with a Butterscotch Latte (our fave morning coffee). It was so yummy! We packed peanut butter and jelly sandwiches for a light lunch along with some Annie’s Pizza Snack Mix.….also delicious and slightly addicting. We’re both foodies if you can’t tell lol.

Devil’s Courthouse and Courthouse Falls have been at the top of my hiking list for a while now, and I finally got to experience them! It was worth the wait for sure. The ride along the parkway was beautiful as always. The weather was perfectly warm but not too hot, and the sky was blue and clear. Everything is in full green now, and the Rhododendrons are starting to bloom which adds spots of color along the drive. Devil’s Courthouse was our first stop. Though the hike isn’t long, it’s pretty steep. Luke and I were both pretty winded because the trail is mostly straight up. But like I said, this doesn’t last long and before you know it you’ve reached the top of this incredible rocky overlook that has an AMAZING view of the Blue Ridge Mountains. It’s crazy how high up you are and how far you can see, especially on a clear day like it was. Breathtaking.

Courthouse Falls is about 20 minutes from Devil’s Courthouse and it’s a really easy hike. This waterfall is enchanting. It’s located in a secluded part of the woods complete with a deep swimming hole and even a place to jump from the top (which I really want to do next time). It was one of the prettiest waterfalls I’ve seen; it’s so calm but so powerful at the same time. The perfect spot to cool off after a long and hot summer day. There were several people there when we went so it was kind of crowded, so it’s probably better to go really late in the evening or before lunch.

After a great day of hiking, enjoying my boyfriend’s company, and hours of RoadTrip XM radio, I was seriously craving some sushi. Since I lived in Utah, I haven’t had really great sushi, so I was in desperate need. We looked up several restaurants on Yelp and finally decided on a place in Asheville called Green Tea Japanese.  I ordered a Sweet Potato Roll and and their house Fire and Ice Roll and they were so good! Best sushi I have had in a LONG time. They were both fried (so I splurged a little) but it was totally worth it because they were fabulous! Their sushi presentation was not that great, but who cares because it tasted so great. Luke got the Hibachi Chicken and Fried Rice and it was delicious as well. We were really impressed; going back soon for sure.

It was such a wonderful day all around and I can’t wait for our next adventure. I know it’s hard sometimes to find time to take little day trips but it’s super important to have these days where you are carefree and let all worries go (even if just for a short time). I felt so much better after spending the whole day outdoors and it gave me positive vibes for the following work week. Of course I wish I wasn’t stuck inside and was spending my time basking in the sunshine and fresh air, but it just makes me more excited for the next adventure.
