Churros are one of my favorite Mexican desserts, and these waffles are an exact healthy replica. PERFECTION<3

Yield: 4 servings
  • 1 cup almond milk
  • 1 extra large egg
  • ½ teaspoon vanilla extract
  • 2 tablespoons Kerrygold butter, melted
  • 2 tablespoons Truvia
  • 1 cup unbleached all purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • pinch of salt
  • ¼ teaspoon cinnamon
For the coating:
  • 2 tablespoons Kerrygold butter, melted
  • 3 tablespoons xylitol
  • 1 teaspoon cinnamon

  1. In a large bowl, mix milk, egg, vanilla, butter, and Truvia.
  2. Add flour, baking powder, baking soda, salt, and cinnamon. Mix until just combined.
  3. Pour 2 tablespoons melted butter in separate bowl and set aside.
  4. Mix cinnamon and xylitol in a bowl large enough to dip waffles in and set aside.
  5. Pour in ⅓ cup waffle mix into preheated and buttered waffle iron. Cook until crisped around edges.
  6. Remove from waffle iron and brush immediately with butter and dip in cinnamon xylitol mixture.
  7. For added deliciousness, top with Oikos Frozen Greek Yogurt! Enjoy:)
