Decided to jump on the overnight oats bandwagon. Let me just say…why did it take so long!? I should have been making these a long time ago. Overnight oats are so easy to put together the night before and ready as soon as you get up in the morning for breakfast. You know I’m all about those easy and fast recipes. Chunky Monkey is usually a combo of bananas, nuts, and chocolate. I passed the Ben&Jerry’s ice cream one day at the grocery store, saw this flavor, and let me tell you….hard to walk away my friends.This delicious recipe combines all of those yummy ingredients into a healthy and filling breakfast option, topped off with one of my FAVORITE protein bars of all time: Square Organics Chocolate Coated Peanut Butter Bar. YUM.
I love Square Organics for so many reasons. #1 their bars are delicious, #2 they use only the cleanest organic ingredients, and #3 because they keep me full and help sustain my energy. The chocolate in (and on) a Square Bar tastes so REAL. There are no artificial ingredients; just simple and wholesome foods that make this snack so tasty and healthy. I swear I eat 2-3 a week as my daily snack, but they are good for so many different things! You can crumble them on ice cream, yogurt, toast, pancakes, waffles, smoothies….the possibilities are endless. In this recipe they make the perfect topping and really complete this scrumptious breakfast option.
I came across this fabulous recipe by Julie Wunder on her blog Running in a Skirt. All of the recipes she makes look amazing and I lovvveee her enthusiasm to live life fully through health, travel and FOOD of course!
As I mentioned, this is my first time making overnight oats. I never realized that mixing oats with a liquid and then refrigerating could turn them into a nice thick consistency that is perfect for a parfait-style layered breakfast. There are so many different variations you can try to make this recipe unique. Layer your favorite fruit, toppings, yogurt, and whatever else you can find in your kitchen (within reason….no hot sauce or eggs people, that is disgusting) to make it even more delicious!
- 1 cup oats
- 1 cup organic whole milk
- ½ tablespoon chia seeds
- ½ cup plain organic yogurt
- 2 T. organic/natural peanut butter, divided
- 1 banana, sliced
- 1 T. coconut flakes
- 1 T. dark chocolate chips
- 1 tsp. vanilla extract
- sprinkle of Stevia
- 1 Chocolate Coated Peanut Butter SquareBar (optional)
- Mix the oats, milk and chia seeds in a container. Refrigerate overnight.
- In the morning, mix in the greek yogurt and half of the peanut butter along with a dash of Stevia (to taste) and vanilla extract.
- In a parfait glass or jar, layer oat mixture with remaining peanut butter, banana, coconut flakes, and chocolate chips. Top with any extra toppings you wish, and a SquareBar if you want it to be SUPER delish.
