I’m constantly amazed by the yummy things that dates can make. Take a Lara Bar or RX Bar for example….I seriously one almost every day. Dates have this wonderfully natural sweetness that makes the best protein bars and snacks. I used to get date-rolls at Earth Fare all the time with my Mom. They were pretty good, but this recipe that I made a few days ago is EVEN BETTER!
I love finding recipes that literally take 5-10 minutes to make. Especially lately since I’ve been so busy and I’m about to leave for my Cali road trip! So let’s just say I need something yummy on-the go, and that will give me a little boost of energy. I’ve been pretty sluggish the past few days. I don’t know if it’s the stress of everything I need to do or if my diet is lacking in something…I’m just not sure. So I’ve been experimenting with different foods that will (hopefully) promote energy.
So….I have to confess. I’m a serious chocoholic (if you hadn’t already guessed) and where I’ve not been eating dairy lately, my sweet tooth has bee dying for some GOOD chocolate. These balls use cocoa powder instead of actual chocolate, so they fixed my sweet craving temporarily which was great! I was super excited this morning to get up and have some for breakfast…but to no surprise my Mother ate them last night! I really need to start hiding things better lol. Love you Mom 🙂
One of the things I used in this recipe that I thought made it even more delicious, is one of my new favorite peanut butters Betsy’s Best Gourmet Peanut Butter. My current favorite flavor is the Peanut Butter with Cinnamon and Chia Seeds. It’s so yummy! It’s a little sweet, which I love, and goes great in and on pretty much everything.
I would definitely recommend doubling or tripling this recipe because they keep really well in the fridge, and it is INSANELY hard to just have 1 or 2. I liked eating them with my breakfast or lunch to get some energy and add a little sweetness, but they are great for snacks or dessert too. They will be your new addiction. I’m sure of it.
- -3/4 C. raw almonds
- -1T. raw oragnic cocoa powder
- -12 pitted medjool dates
- -2 T. all-natural peanut butter (I used Betsy's Gourmet, Cinnamon Chia)
- -shredded coconut for topping (optional)
- Put almonds in food processor and pulse for about 30 seconds or until the almonds are extremely fine (like almond flour). Set aside.
- Process the pitted dates until they are almost a thick paste.
- Add the rest of your ingredients to the dates, including processed almonds, and pulse again for about a minute until mixed well.
- Form the dough into balls and roll in shredded coconut (if desired). Enjoy!
