I hope everyone had a wonderful Mother’s Day! I know that I’m guilty of not thanking my Mom enough for everything that she does for me. My Mom is my best friend for several reasons. Not only do we have this weird telepathy thing going on and we laugh all the time at absolutely nothing, but she has spent her whole life doing everything that she can to make my dreams come true and loving me unconditionally; I will forever be grateful for that. It was great to spend some time yesterday making my Mom feel extra special. I got up early to make a special breakfast that I was super excited about; a German Apple Pancake along with turkey bacon and a latte. The antique store that I work at has the CUTEST stuff, so I found a vintage serving tray that I put her breakfast on and added some fresh Rhododendron flowers to set it off beautifully. The recipe called for 5 eggs and I thought that was a little strange, but it was a famous recipe with great reviews so I didn’t think much about it. As my Dad takes the first bite of his pancake he says “this is a little eggy…” I was like you have GOT to be kidding me! I worked my butt off on this breakfast and it isn’t even good?! I was pretty bummed, but you know what? My Mom ate it anyway and was so grateful that I even tried to do something special for her. Don’t get me wrong, the pancake wasn’t terrible, but it just wasn’t as good as I thought it would be. But that’s what’s so great about Moms, they appreciate your efforts more than the result.
So awesome news guys, I am officially done with this semester! I am so relieved and ready for the summer. Most of my summer will be spent working and dancing but I’m totally okay with that as long as I don’t have to do another essay or class discussion. I have two awesome jobs right now, one at a 50’s themed ice cream shop (Cool Catz) and the other at a vintage/antique store (Menagerie). Both of them totally embrace my likes and my personality so it’s super fun. I love listening to Elvis while I work at the ice cream shop and I love finding new and unique vintage treasures at the antique store. My little cousin went to her first prom this weekend and she stopped by work to see me. It’s hard to believe that she’s old enough to go to prom! She looked absolutely stunning.
Another perk about working near my house is that my boyfriend gets to bring me treats to work. I love getting surprise visits from him; it always makes my day better. One day he surprised me with a box of sparkling Bai drinks in various flavors! These drinks are super delicious and only 5 calories! I could drink several a day but I try and limit myself to one…sometimes.
Since we are both addicted to the Flavor God Seasonings, he also ordered some of their new Paleo Jerky and it is FABULOUS. There are several yummy flavors and the meat is so tender, making it a perfect afternoon snack. I paired it with a That’s It bar which is also a new favorite of mine. Fruit is the only ingredient in these bars and they are so DELISH!
So two of my new favorite loves are eggs and everything bagels. So…..I made this super yummy and easy Turkey Bacon Breakfast Bagel this week that was so good!
- 1 everything bagel ( I got mine from the Whole Foods bakery)
- 2 eggs
- Flavor God Seasoning (I used Lemon and Garlic)
- salt and pepper to taste
- 2 pieces of turkey bacon (fried)
- organic cream cheese
- Whisk eggs with Flavor God seasoning and salt/pepper. Scramble then remove from eat when cooked.
- Toast bagel and then top with the ghee, cream cheese, eggs, and turkey bacon.
It’s that simple! So delicious. I added some fresh mango on the side and it really balanced my sweet and savory cravings.
Whether you are spending time with family, cooking a delicious meal, working, dancing, or simply just living, don’t forget to cherish each and every moment. We never get to live moments over again because they didn’t go well the first time or we didn’t take advantage of the situation, so make each one special.
