One of my biggest (and craziest) dreams is to play the game of Survivor. My Mom and I have been watching it for years, and I always felt like I could do pretty well in that game. But in order to do so, I at least need to know how to do 2 things: start a fire, and break open a coconut. Well…the first one hasn’t worked out yet, but the second one just happened! I’m not gonna lie, I’m pretty excited about it.
I decided one day that I would make a smoothie bowl in an actual coconut just because it’s so darn cute! I watched this tutorial on YouTube, and cracked open my own coconut perfectly. I couldn’t believe how easy it was. I literally jumped up and down when I got it….I’m suck a dork.
If you guys have seen my recent Instagram posts or stories, you will see that one of my new favorite wellness/beauty products is Collagen. I have been using collagen for a while now, but just recently switched to the Vital Proteins brand (which I am obsessed with). Collagen is a substance in our bodies that really keeps everything together, and controls the vitality of our hair, skin, nails, joints, and bones; it effects how we look AND feel, inside and out. Pretty big deal right? That’s why our body needs a strong and steady supply. Like any other proteins, it’s important to get them from reputable and highly pure sources. Vital Proteins gets their collagen from grass-fed cattle, which is the best source you can get it from. I am currently using their unflavored Collagen Peptides in to-go packets, which are great to add to any drink (hot or cold) when you’re in a hurry. If I’m home and have some time, I will make a recipe like this smoothie bowl with the Vanilla and Coconut Water Collagen Peptides that has Madagascar Vanilla Bean and sweet coconut water along with the collagen that has such a great and refreshing tropical taste.
You have to be really careful using coconuts in the US because they sour super quickly. You do NOT want to take a drink of expired coconut water; it is DISGUSTING. When making this recipe, I would recommend having some extra coconut water close by so that you have some back-up if that happens. One of my favorite brands is Trader Joe’s coconut water. It’s very refreshing and sweet, very similar to real coconut water.
This bowl is such an amazing treat. Just a heads up though, I did not eat this much fruit on my bowl that I added in the pictures. I used it just as decoration. One thing that is always quite deceiving in food photos is the amount of added sugar on smoothie bowls and drinks in the form of fruit, granola, chocolate…or whatever else is added. It has taken me a while to realize that sugar is one of the most harmful things to our bodies when you eat too much of it. I would recommend topping your smoothie bowl with a nice amount of fruit and granola, but not overdoing it. It will be delicious either way! I do like that added crunch and texture though, it just makes it even more scrumptious, so adding a little is always a good idea.
- 1 C. organic coconut milk
- ½ C. coconut water
- ¼ C. organic/natural peanut butter
- 1 scoop Vital Proteins Vanilla&Coconut Water Collagen
- 2 C. ice
- ⅓ of a frozen banana
- dash of Stevia (to taste)
- toasted coconut
- kiwi, pineapple, mixed berries
- chopped nuts
- If using a coconut, crack your coconut (tutorial linked above) and drain all of the coconut water out. Use this for your coconut water in the recipe (if it tastes good, it shouldn't be sour or fermented).
- Place all BOWL ingredients into a blender and blend until smooth.
- Split your smoothie into each half of the coconut and top with whichever toppings you prefer. Enjoy this delicious and tropical treat!
