If you are singing along with me right now, you’re my soul sister/brother. If not…..you are going to the movie store right now and renting the best Summer movie EVER. I used to watch Grease multiple times during the Summer, especially when I was in middle school and high school. It just puts you in that GREAT Summer Lovin’ mood. 

3 Ingredient Apricot Ice Cream Float (Dairy-Free)This Summer I haven’t got to do the typical Summer things that I would normally do like go to the beach, hiking, laying in the sun….welcome to the adulting life right? So I am trying to make up for it in other ways. I love making special Summer treats that I can feel good about, are super easy (because who has the time to hand-churn ice cream anymore?) and perfect for that hot Summer air! I think that it doesn’t always have to be a special occasion in order to treat ourselves, nor do you have to be surrounded by a ton of people to talk you into it. If we are working out regularly and eating well on a normal basis, then HECK YES are we allowed to indulge. And guess what? This recipe isn’t even really indulging. It uses 3 simple ingredients to make a SCRUMPTIOUS treat: sparkling water, cold-pressed apricot juice, and coconut milk ice cream. DONE. 

3 Ingredient Apricot Ice Cream Float (Dairy-Free)As most of you know, cold-pressed juice has been a big hit lately. Juice bars and new juice brands are flooding our social medias every single day. I actually work at a restaurant that sells cold-pressed juice, so I’m pretty familiar with the aspects of this business. What’s great about cold-pressing juice is that the fruit goes straight from the orchard, gets chopped, and then pressed in order to get optimal taste and nutrition from the fruit. In regular juicing processes, adding extreme amounts of heat and pasteurization removes a lot of the vitamins, minerals, and enzymes that our body can benefit from. Especially because most of us drink juice to be healthier, we want to drink juices that are cold-pressed so that we get the best benefits. Red Jacket Orchards also use organic and biodynamic production methods to maintain an incredibly high quality of juice. Because of this, it’s absolutely delicious! They also add no sugar or other ingredients to their juice which I really love.

3 Ingredient Apricot Ice Cream Float (Dairy-Free)
 
This healthy treat is so easy to make, and perfect for a Summer night.....(Grease reference?) Using only 3 simple ingredients, you will want to have an ice cream party every night!
Serves: 2 floats
Ingredients:
  • 1 C. Red Jacket Apricot Juice
  • ½ C. sparkling water
  • 1 C. coconut milk ice cream (I used Coconut Bliss Vanilla)
Instructions:
  1. Put ½ C. of your ice cream in each glass.
  2. Top each glass of ice cream with ½ C. of Apricot juice.
  3. Finish off with sparkling water. Top with a flower or fruit for added fun and enjoy!
